Ang will be making Fiesta Fajita Bowls using Texas dry rub recipe from our friends at Sparks Agency. Our kitchen cocktail recipe is brought to us courtesy HD Liquid Catering.

Fiesta Fajita Bowls

1 1/2 lb boneless skinless chicken breast cut into strips
1 of each red pepper, orange pepper and yellow pepper cut into strips
1 red onion sliced thin
3 garlic cloves minced
3 Tablespoons Olive Oil
Fiesta Seasoning Pack
1/4-1/2 cup chopped cilantro
2-3 Fresh Limes
1 can of Black beans
1 cup of white rice
1/4-1/2 cup sour cream

Preheat Oven to 425

Slice chicken and peppers into strips
Thinly slice red onion
Coat with Garlic, Olive oil And Fiesta seasoning
Spread evenly onto lightly brushed baking sheet with olive oil or cooking spray and bake for 25 minutes give or take depending on your oven.
While fajitas are in the oven, mix 1 cup rice and  1/2 tsp salt with 2 cups water. Bring to boil then reduce to low. Cover and simmer for 20 minutes. Remove lid, fluff with fork and add 1/4 cup cilantro with zest and juice of 1 lime to rice
Heat black beans through in sauce pot
Mix 1/2-1 cup sour cream with salt, lime juice and zest of lime
Begin building Fiesta Fajita Bowls by layering rice, black beans, chicken fajita mixture and topping with Crema, cilantro and lime wedge
